Red fermented rice is a natural product that has been used by traditional Asian herbalists since around 800 AD. Produced by fermenting red yeast (Monascus purpureus) with white rice, red fermented rice is commonly used in cooking to enhance the color and flavor of food. For example, Peking duck is a recipe where red fermented rice is used to give the dish a nice color and enhance its flavor. NOW's production of red fermented rice is carefully monitored to exclude the presence of citrinin, an undesirable byproduct of the fermentation process.

Directions for use
Take one (1) capsule 1–2 times daily, preferably with meals.
